Healthy Noodle Soup with Veggies

If a healthy noodle soup recipe is what you’re on the hunt for, this one’s got you covered. Start by sauteing some chopped ginger and garlic along with your favourite chopped veggies in a large pot with some oil- cabbage, onions, bell peppers, mushrooms, courgette, carrots, spring onions, french beans, broccoli and bok choy are some good options.  

Now add in the stock or water, soy sauce and a little tomato paste and allow it to come to a boil. Season with salt and pepper. Finally, right before you serve, add in the boiled noodles and garnish with chopped coriander. 

Ginger Garlic Noodle Soup

And here’s an incredibly nutritious and lip smacking delicious soup recipe you definitely gotta try! Saute some diced shallots in a large pot with some oil. Then add in a generous amount of minced garlic and ginger and allow it to soften. Pour your stock into it, add in a star anise and soy sauce and allow it to simmer. 

Remove the star anise, add in the boiled noodles, some sliced mushrooms, chopped bok choy and some chopped spring onions. Season to taste and serve it in individual bowls with a sprinkle of sesame seeds on the top! 

Creamy Chicken Noodle Soup

This one’s a nice twist on a classic you just can’t go wrong with. Just make your chicken noodle soup the way you usually make, and then give it some added richness by pouring in some fresh cream or replacing the stock with a stock cube and some milk.

Korean Style Noodle Soup

Classic comfort food in Korea and packed full of flavour, this one might just become your next favourite! Start by sauteing some mushrooms, courgette, spring onions, baby corn and crushed ginger together in some peanut oil until they turn just soft. Throw in some chopped garlic and red chillies and saute for another minute. Now add in the stock, tomato puree, whole wheat noodles, oyster sauce, red chilli sauce, jaggery, soy sauce and bring it to a boil. Thicken the soup with a mixture of some cornflour and water, and sprinkle some toasted sesame seeds and chopped coriander on the top before serving!
